Vegan Cuban Party
This weeks event is a Cuban-style party, with fresh Cuban food and a to-die-for salsa outfit to wear.
Start the evening off right with some delicious Cuban appetizers.
Cuban Avocado Pinwheels
4 medium sized avocados
1 cup vegan sour cream
2 small onions, grated
2 Tbsp lime juice
1 cup vegannaise
salt to taste (*)
12 tortillas
In a medium mixing bowl, mix together avocado, sour cream, onions, lime juice, vegannaise and salt. Mix until creamy and smooth. Spread avocado mixture on tortillas and roll the tortillas up. Cut tortillas into 1 inch wheels and plate for serving.
Next serve your guests this delicious and light Cuban Salad
1/2 head of baby lettuce, unchopped
1 avocado
1 red onion
2 tsp. olive oil
lime juice
salt to taste
Arrange the leaves of lettuce, and then top with small slices of avocado and onion. Add olive oil, sprinkle with salt, and then add a squeeze of lime juice.

Serve Grilled Eggplant on the side
In a small bowl mix together 1/4 cup olive oil, two finely chopped garlic gloves, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cut eggplant into thick slices and brush with olive oil mixture, place on the grill and cook for about 10 minutes on each side.
No party would be complete without dessert and I have got the perfect recipe for you to serve to your guests:
Key Lime Pie
1 package silken tofu
8 oz sour cream
6 limes
1 cup maple syrup
2 tbsp corn starch
1 package of organic graham crackers, crushed
1 cup vegan butter spread
In a small sauce pan melt butter spread and pour over crushed graham crackers. Toss butter spread and graham crackers together and pie into a pie pan. Press mixture into pie pan, until the bottom and sides are completely covered. Zest three of the limes and set zest aside. Juice all six limes and set aside. In a small sauce pan heat two tbsp water and add corn starch. Mix together well. Add juice from limes, lime zest and maple syrup and cook until mixture begins to thicken. In a medium mixing bowl blend tofu and sour cream together. Add lime mixture and blend until smooth. Pour into pie crust and place in the refrigerator for at least four hours before serving.
